4. Zucchini-Olive Couscous This zucchini recipe has the added bonus of being something my family will actually eat without having to be coerced! They will eat anything with green olives!
5. Zucchini, Mushroom, and Ricotta Salad Okay, so the fam wouldn't touch this one, but yum, does it sound good to me!! Maybe I'll have to have a girlfriend over as an excuse to make it. : )
6. Zucchini Grinders Part veggie lasagna, part sandwich and all yummy!
7. Apple Zucchini Squares These are pure genius! And you've gotta go read the first comment in which the blogger's hubby gives them a five star rating. (and I think that's pretty sweet!)

I absolutely love Zucchini - but no-one else in my house does! All I can persuade them to eat is a nice zucchini slice with bacon in it!

Olivia, your zucchini post may just be an answers to my prayers. I pared down to 2 zucchini plants in my garden this year, but they decided to make up for the other 4 I chose not to plant! I have so much zucchini right now. They are beautiful and healthy and I want to use up every single one (the one's I don't give away of course). Thanks for this great post... it is like a mini zucchini cook book!

Hooray for zucchini :) Can't wait until our plant finally starts producing. Lots of blooms right now since we were late getting it in the ground. But we have lots of other fun going on.
