10 Yummy Meals

When it's cold and we're inside more, I tend to veer toward the comfort foods for our family. Sometimes we're all in the kitchen together and it's great to have simple, kid-friendly recipes too. So here are a few of the ones we've had recently and will have in the next week.
#1. Scrambled eggs, link sausage, and homemade cinnamon biscuits.
Homemade Cinnamon Biscuits
Mix together:
1 1/2 cup AP flour
1/2 cup whole wheat flour
1 T baking powder
Cut in:
1/4 cup Crisco shortening
Blend gently with 3/4 cup milk.
In a separate bowl, mix 1 Tablespoon cinnamon and 2 Tablespoons sugar. Cut in 2 Tablespoons softened butter. Blend this gently into the biscuit mixture. Sprinkle the tops of the biscuits with a little more cinnamon and sugar mixture.
Bake at 500 degrees for 8-10 minutes. Pull out and drizzle with this vanilla glaze.
#2. Chicken, egg noodles, frozen peas, and this wonderfully simple alfredo sauce.
#3. Cornbread Mexican Casserole made with my own cornbread.
Cornbread: 1/2 cup yellow cornmeal, 3/4 to 1 cup milk, 2/3 cup AP flour, 1 teaspoon baking powder, pinch of salt, 2 T sugar, 1 egg, 3 T vegetable oil
#4 Been and Beef Burritos Brown ground beef (or ground turkey) and add taco seasoning and water. (For us, I also added 1/2 cup of shredded carrot to add a little veggie in our meal). Simmer for about 5 minutes then add 2/3 can of refried beans. In a separate pan, melt a little butter, throw in a tortilla and place about 1/3 cup of bean and beef mixture in the tortilla. Add a little shredded cheese and wrap the tortilla around the filling. Repeat until all of the beef and bean mixture is used. Serve with shredded lettuce, sour cream, more shredded cheese, and salsa.
#5 Homemade pizza rolls I will use the cheeseburger bun recipe from this post and stuff it with an entire package of pepperonis (chopped) 2-4 cups shredded mozzarella cheese, and 1 to 2 jars pizza sauce. I think this will be our weekend food. We'll have them on Friday night and eat the leftovers on Saturday.
#6 Pot Roast You really can't beat a pot roast for ease, comfort, and yumminess! I like to mix an onion soup mix packet, 1/4 cup worcestershire sauce, and a can of cream of mushroom soup to pour over my roast, potatoes, and carrots.
#7 Pork chops, grits casserole, and broccoli. The hubby loves the chops smothered in Tennessee Whiskey Sticky Fingers Barbecue Sauce and baked.
#8 Crispy Kung Pao Chicken (my new recipe for the week).
#9 Beef and Barley Stew I'll be taking meals to 3 women in our church who just had babies on Thursday, and I think this will be the meal to share with all of them. I'll triple the recipe and keep some at home for our dinner too. I'll probably use this recipe but tweak a few things--like adding some brown gravy mix and changing up some of the veggies.
#10 Stouffer's Lasagna, Garlic Bread, green beans, and salad. Sometimes we buy the BiLo meal deal instead of eating out. Last Saturday was one of those times. We spent the day out swimming at the Y and playing in the park. Dinner was easy and yummy!

  3. loved this post! gonna love next week's even more:) Check out this website www.scdiet.org for my recipes. I'll email a few others I've found that are awesome. My #1 request is for you to help me find a really good plain vanilla ice cream recipe using honey as the only sweetener. yes, I know I can add fruit but sometimes i just crave plain 'ol vanilla...know what i mean? Thanks Olivia, You're awesome!
