Juicy Juice Popsicles

One of the snacks on our menu this week is fruit pops! 
The last time I made them, we were at Grandma's house and didn't have any ice trays so we improvised and used juicy juice boxes to freeze our smoothies into popsicles. In the above popsicles we included:
1 cup fruit yogurt
1 cup blue berries
1 cup strawberries
2 frozen bananas
2 boxes of juicy juice 
(I usually use orange juice, but we needed the extra boxes.)
Any kind of fruit will do, but if you're just going to drink them as smoothies, I highly recommend a base of frozen bananas. That way you don't have to put in ice and the smoothies are richer and smoother. Yum!
Besides smoothies and popsicles, I've decided to make this a week of salads:
Sunday night: 4th of July Salad (with chicken and tomatoes and red peppers and lots of other veggies on green leaf lettuce)
Monday: Possibly eat out at Qdoba with a great coupon. I'm sure I'll have their salad!
Tuesday: Tuna Salad sandwiches
Wednesday: Zucchini Tomato Pie (okay, I know it's not a salad, but I'm craving one and it's very summery!) and a side salad
Thursday: Taco salad (green leaf lettuce, black beans, taco meat, cheese, salsa, etc.)
Friday: Cobb Salad
Saturday: Pizza. I'm sure my family will be very happy to have something other than salad!

  5. OO! i love that juice box idea! i'm gonna show my husband so he can make them for me! hahaha. (he loves doing that kind of thing... so might as well capitalize on it!) thanks for sharing! :D

  6. I think I'll make some of these for my kids this afternoon... I've got some juice, frozen strawberries, and yogurt that will be great in this!
