A New Muffin

Here's another muffin for you out there (yes, I'm still crazy about muffins)!
This one's an Olivia tweaking of the Betty Crocker cookbook "Popular Muffin."
Fruit Muffins
1 egg
1/2 cup milk
1/2 cup plain or fruit flavored yogurt
1/4 cup canola oil
1 1/2 cup AP flour
1/2 cup whole wheat flour
1/4 cup sugar
2 1/2 teaspoons baking powder
1 +/- teaspoon salt
3/4 cup chopped strawberries
3/4 cup blueberries

Heat oven to 400 degrees. Grease bottoms of 12-16 muffin cups. Beat egg, stir in milk, yogurt, and oil. Mix in remaining ingredients just until flour is moistened. Add fruit last.
Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan.

These muffins turned out not very sweet, so if you prefer a sweet muffin, you could add another 1/4 cup of honey or sugar. They were very soft and light. Yum! I think I'm going to make them every day this week because I've already consumed most of the first batch on my own!

  2. Oh, that sounds good! I love taking a recipe and changing it even just a little to make it something new and my own! If I can find some good strawberries I am going to have to try this one!
