What's Up For This Week

This week is a normal one, which lately is very abnormal!
Tonight I help teach a class on baby care at our local pregnancy resource center, so as far as menu goes, I'll be leaving a simple chicken noodle soup and home made rolls for the hubby and kiddos. (I shook a few too many onion flakes in it; I hope they don't notice!) These rolls are the best and easiest I've found, (I use 1/2 whole wheat and 1/2 AP flour) and I should have enough left (I'm taking some for our dinner in the class too) to serve with at least one more meal here this week.
Tomorrow I take the two younger kids to Mother's Day Out, teach the older one at home, and we're all home in the evening. Yay! I'm going to make a crock pot goodie with a pork roast, potatoes, and carrots--using brown gravy mix and worchestershire sauce. I might serve some left over rolls with that or cook up some frozen corn on the cob.
Wednesday the kids and I head to our YMCA for dance and pilates classes for me (YAY!) and kid time in the Adventure Center for the kids. They love it, I love it, and we're all really happy when we get home. The two bigger kids have choir in the evening and then we'll have spaghetti and broccoli for dinner. Easy and everyone will eat it. : )
Thursday is a repeat of Tuesday and I'll make some meatloaf for dinner. I haven't made that in a really long time. I usually just feel my way through a meatloaf and add whatever I have on hand--whole wheat cracker crumbs, tomato sauce, etc. Ooh, look what I just found on All Recipes! Since I'm still on my muffin kick (see here) I may just have to make my meatloaf that way! It would cook really quickly, that's for sure! (Oh, and I'm working on a pizza muffin recipe that I'll share when I've got it right. My family is patiently taste-testing in the meantime!)
Friday we do school in the morning and then the hubby comes home early so we can go to the Y as a family. I do a pilates class, the hubby works out on his own, and the kids enjoy the Adventure Center. Everyone wins! And hopefully, we'll go out for something cheap (or free with coupons) for dinner.
And to finish off the details: for homeschool, my oldest is using verses from 1 John for her handwriting, doing wonderful worksheets from a book called "Giving Thanks," working on place value and even and odd numbers (plus continuing to practice adding and subtracting), adding to a giant timeline for history (will blog about that one soon), Journaling, reading the Secrets of Droon series for her free reading, and memorizing the US Presidents using this fun book.
And every single day the littlest takes a good nap (praise the Lord!) and the two older spend a good while in their room reading and playing quietly. This is my sanity time. : )

  1. That sounds like a great week! You're welcome to come over for dinner Friday night if you want, but I doubt Matt will be here -- he's on call all weekend, which most likely means a late night Friday...but you never know. Or maybe we'll JOIN YOU!?! (At the Y)
